Grillo Description
Origin: Sicily, Italy
History: Grillo is a white Italian wine grape variety that withstands high temperatures and is widely used in Sicilian winemaking, particularly for making Marsala. Its origins are uncertain, but it may have been introduced into Sicily from Apulia. It was already widely planted in the Province of Trapani by 1897; today it is grown throughout Sicily and also in the Aeolian Islands.
Appearance: Small to medium-sized, yellow-green berries forming compact clusters.
Growing Traits: Grillo is a vigorous and productive grape variety that thrives in the hot, dry climate of Sicily. It is resistant to high temperatures and has a good tolerance for drought conditions. The grape's thick skin provides some protection against diseases, and it is known for its ability to retain acidity even in warm climates, making it suitable for producing fresh and aromatic wines.

Food Pairing
Grillo's vibrant acidity and citrus notes make it a versatile companion for various dishes. It pairs well with seafood, particularly shellfish and grilled fish, as well as light pasta dishes and salads. Medium-bodied with a vibrant and zesty character, offering a harmonious balance of fruit and acidity. Typically dry, though some off-dry styles are produced, especially in late-harvest wines.
