History
Grillo is a white Italian wine grape variety that withstands high temperatures and is widely used in Sicilian winemaking, particularly for making Marsala. Its origins are uncertain, but it may have been introduced into Sicily from Apulia. It was already widely planted in the Province of Trapani by 1897; today it is grown throughout Sicily and also in the Aeolian Islands.

Medium-bodied with a vibrant and zesty character, offering a harmonious balance of fruit and acidity. Typically dry, though some off-dry styles are produced, especially in late-harvest wines. Negligible tannins, as it is a white wine variety, resulting in a smooth and clean finish. Medium to high acidity, contributing to its freshness and enhancing its aging potential. Moderate to high alcohol content, typically ranging between 12.5% and 13.5%, providing a robust and warming character.
Grillo wines are characterized by flavors of grapefruit and citrus blossom, complemented by herbal notes of thyme and a distinct minerality. The medium to high acidity provides a refreshing and zesty mouthfeel, while the saline undertones add complexity to the palate.
Grillo's vibrant acidity and citrus notes make it a versatile companion for various dishes.
