History
Diolinoir is a red grape variety developed in 1970 by André Jaquinet at the Caudoz research center in Pully, Switzerland. It is a cross between Pinot Noir and Rouge de Diolly (also known as Robin Noir), created to produce wines with intense color and structure, suitable for improving Swiss red blends. Over time, it has gained recognition as a varietal wine, particularly in the Valais region.
Appearance
Small, spherical berries with blue-black skin, forming medium-sized, elongated, and tight clusters.
Growing Traits
Diolinoir is a vigorous and fruitful vine with good resistance to rot. It ripens around the same time as Pinot Noir and Gamay, making it suitable for alpine climates. To express its full potential, it requires careful yield management and is ideally harvested at full maturity.
Medium to full-bodied with a deep, dark color and a harmonious balance of fruit and tannins. Typically dry, focusing on ripe black fruit flavors with minimal residual sugar. Moderate to high tannin levels, providing structure and depth, making it suitable for aging. Moderate acidity, contributing to a balanced and approachable profile. Moderate alcohol content, typically ranging between 12% and 14%, ensuring balance and drinkability.
Diolinoir wines are characterized by deep dark color with violet reflections and intense fruit flavors, such as blackberry and black cherry. The palate often reveals subtle spice and earthy undertones, balanced by moderate acidity and firm tannins, leading to a smooth and harmonious finish.
Diolinoir's rich fruit flavors and firm tannins make it a versatile partner for various dishes. It pairs well with wild game (deer, roe deer, wild boar), red meat matured on the bone, and rich desserts based on chocolate, red fruits, or candied fruits.
